For the granola:
3/4 cup P.A.N. Sweet Corn Mix
1/4 cup almond flour
1/4 cup sugar
1/4 cup brown sugar
5 tablespoons cold butter (sliced)
1 teaspoon salt
2 tablespoons oats
2 tablespoons almonds (slivered)
For the parfait::
1 cup peaches (roughly chopped)
1 cup small strawberries
1 cup yogurt
1. In a food processor, cream the butter and then add the sugars until thoroughly combined. Add the P.A.N. Sweet Corn Mix, the almond flour and salt and blend until all the ingredients are combined.
2. Add the oats and the slivered almonds and briefly mix on low.
3. Pour the mixture evenly into a pan set to medium heat and stir constantly until golden. Remove from the heat. Spread the granola on a tray and refrigerate to cool.
4. For the parfait: layer the granola, peaches, yogurt and strawberries in a jar.
