Healthy, Hearty Minestrone Soup

4 tablespoons olive oil
1/2 cup red onions (chopped)
1/2 cup broccoli (chopped)
1/2 cup carrots (chopped)
1 can red beans
1 can white beans
1 can diced tomatoes
1 tablespoon tomato paste
2 cups sweet potatoes
4 cups chicken broth (or vegetable broth)
1 tablespoon garlic (minced)
2 tablespoons dried parsley
1 teaspoon Salt
1 cup whole wheat elbow macaroni
1/2 cup Parmesan cheese (or Romano)

1. Add olive oil to large pot. Add onion, carrots, and broccoli; saute for a few minutes.
2. Add beans, tomatoes, tomato paste, sweet potatoes, broth, garlic, parsley, and salt, and bring to boil. Cover, and reduce heat. Simmer for 1 hour,
3. Add pasta, and simmer for 30 minutes more, or until cooked. Add salt to taste, and serve hot with cheese on top.
